Una cerca a internet ens remet de seguida a la llista de <a href=\"https:\/\/www.aesan.gob.es\/AECOSAN\/web\/para_el_consumidor\/ampliacion\/aditivos.htm\">additius<\/a> alimentaris, amb la indicaci\u00f3 de com es fan servir i del seu grau de toxicitat.<\/p>\n\n\n\n<p>Segons els exemples, l\u2019E-162 \u00e9s un colorant (vermell de remolatxa) que s\u2019empra per als productes de confiteria i els lactis. L\u2019E-330 \u00e9s l\u2019\u00e0cid c\u00edtric, que es fa servir, en concret, per acidular les confitures i evitar la proliferaci\u00f3 de fongs. L\u2019E-324 \u00e9s l\u2019etoxiquina, un pesticida que tamb\u00e9 fa una funci\u00f3 de conservant en el pinso per a animals. Els dos primers additius (l\u2019E-162 i l\u2019E-330) tenen una toxicitat baixa, \u00e9s a dir s\u00f3n segurs; en canvi, el tercer, l\u2019E-324, es considera de toxicitat alta i en dosis elevades pot tenir efectes secundaris.<\/p>\n\n\n\n<p>L\u2019E-621 \u00e9s el glutamat monos\u00f2dic i en parlarem a continuaci\u00f3.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"El_glutamat_monosodic\"><\/span><strong>El glutamat monos\u00f2dic<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>\u00c9s un potenciador del gust. Els gustos b\u00e0sics s\u00f3n dol\u00e7, salat, amarg i \u00e0cid, un quartet al qual s\u2019ha afegit, els darrers anys, un cinqu\u00e8 component: el sabor umami. Aquest gust \u00e9s el que el glutamat aporta als aliments.<\/p>\n\n\n\n<p>Hi ha aliments que contenen glutamat de manera natural, com ara el pernil, les nous, uns quants bolets, certs formatges (parmes\u00e0, cheddar o rocafort), els tom\u00e0quets, els p\u00e8sols, la carn de vedella i de pollastre, el salm\u00f3, la llet (fins i tot la llet materna), les algues i el te verd, entre d\u2019altres.<\/p>\n\n\n\n<p>A fi de potenciar el gust dels aliments, es pot <a href=\"https:\/\/tecnosolucionescr.net\/blog\/228-el-glutamato-monosodito-preservante-presente-en-todos-los-alimentos-procesados\">trobar glutamat<\/a> com a additiu a:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Les sopes de sobre<\/li>\n\n\n\n<li>Bosses de patates fregides<\/li>\n\n\n\n<li>Aperitius salats i llaminadures<\/li>\n\n\n\n<li>Pastilles de brou<\/li>\n\n\n\n<li>Unes quantes salses industrials<\/li>\n\n\n\n<li>Croquetes congelades<\/li>\n\n\n\n<li>Carn processada<\/li>\n<\/ul>\n\n\n\n<p>Les autoritats sanit\u00e0ries han investigat el glutamat a consci\u00e8ncia i s\u2019ha arribat a la conclusi\u00f3 que la ingesta habitual de glutamat no perjudica la salut, \u00e9s a dir que es <a href=\"https:\/\/www.eufic.org\/es\/que-contienen-los-alimentos\/articulo\/que-es-el-glutamato-monosodico-es-perjudicial-para-la-salud\/\">considera \u201csegur\u201d<\/a> o de toxicitat baixa. Fa molts anys que s\u2019empra en el sector alimentari.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"533\" src=\"https:\/\/www.mgc.es\/wp-content\/uploads\/2023\/09\/queso-parmesano.jpg\" alt=\"\" class=\"wp-image-30157\" srcset=\"https:\/\/www.mgc.es\/wp-content\/uploads\/2023\/09\/queso-parmesano.jpg 800w, https:\/\/www.mgc.es\/wp-content\/uploads\/2023\/09\/queso-parmesano-440x293.jpg 440w, https:\/\/www.mgc.es\/wp-content\/uploads\/2023\/09\/queso-parmesano-768x512.jpg 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<p>A Europa \u00e9s obligatori d\u2019indicar que el producte en q\u00fcesti\u00f3 inclou glutamat monos\u00f2dic, al contrari del que passa als Estats Units.<\/p>\n\n\n\n<p>Aix\u00f2 no vol dir pas que el debat s\u2019hagi acabat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"El_debat_sobre_el_glutamat\"><\/span><strong>El debat sobre el glutamat<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>D\u2019en\u00e7\u00e0 que es va comen\u00e7ar a fer servir com a potenciador del gust, hi ha un arxiu atape\u00eft d\u2019estudis sobre els possibles efectes secundaris que s\u2019atribueixen a aliments amb glutamat afegit. Les recerques dutes a terme no demostren cap relaci\u00f3 de causalitat; \u00e9s a dir no s\u2019ha pogut provar clarament que els efectes que descrivim a continuaci\u00f3 es puguin vincular amb aliments amb aquest additiu.<\/p>\n\n\n\n<p>Tanmateix, la comunitat cient\u00edfica admet que es poden presentar a curt termini en casos isolats.
