Aquest impulsor es combina amb un altre parell d\u2019ingredients m\u00e9s, la farina i la sal, per obtenir el pa amb pasta mare.<\/p>\n\n\n\n<p>La pasta mare aprofita els bacteris i el llevat natural per fer fermentar el pa i augmentar-ne el volum. T\u00e9 un gust lleugerament \u00e0cid, a causa de l\u2019\u00e0cid l\u00e0ctic que es genera durant el proc\u00e9s. Ara b\u00e9, quins beneficis t\u00e9 exactament?<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Es paeix m\u00e9s b\u00e9 que el pa normal<\/strong><\/h3>\n\n\n\n<p>Aquest fet \u00e9s, de ben segur, una bona not\u00edcia per als qui tenen trastorns digestius com ara la s\u00edndrome de l\u2019intest\u00ed irritable.<\/p>\n\n\n\n<p>Una part del gluten fermenta durant el proc\u00e9s d\u2019elaboraci\u00f3 de la pasta mare, cosa que pot implicar facilitar la digesti\u00f3 a les persones amb trastorns digestius, en les quals el gluten fermenta en el c\u00f2lon i aix\u00f2 \u00e9s la causa d\u2019inflor i diarrea.<\/p>\n\n\n\n<p>Hi ha persones que han suprimit el pa de la dieta per problemes digestius. Els recomanar\u00edem d\u2019intentar de menjar-ne una petita quantitat i comprovar si tenen s\u00edmptomes d\u2019incompatibilitat.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>\u00c9s m\u00e9s nutritiu<\/strong><\/h3>\n\n\n\n<p>Amb nom\u00e9s tres ingredients \u2014farina, pasta mare i sal\u2014 \u00e9s m\u00e9s nutritiu que el pa normal, i aix\u00f2 \u00e9s fruit, novament, del proc\u00e9s de fermentaci\u00f3.<\/p>\n\n\n\n<p>Tots els pans, tant si s\u00f3n fets amb pasta mare com no, contenen minerals essencials per a la salut: potassi, magnesi i zinc. La difer\u00e8ncia rau en el fet que el pa normal tamb\u00e9 t\u00e9 \u00e0cid f\u00edtic, que \u00e9s un compost que dificulta l\u2019absorci\u00f3 d\u2019aquests minerals.<\/p>\n\n\n\n<p>El pa amb pasta mare cont\u00e9 un nivell d\u2019\u00e0cid f\u00edtic molt inferior, perqu\u00e8, durant el lent proc\u00e9s de fermentaci\u00f3 natural, es descompon en bona part, cosa que facilita en un alt grau l\u2019absorci\u00f3 dels minerals per l\u2019organisme.<\/p>\n\n\n\n<p>Molts pans tenen for\u00e7a glucosa, i aix\u00f2 pot fer que augmenti el valor de la gluc\u00e8mia (\u00e9s a dir la concentraci\u00f3 de glucosa a la sang), despr\u00e9s de menjar-ne. El pa amb pasta mare no t\u00e9 tanta glucosa, at\u00e8s que la major part de pasta mare es fa servir per produir el llevat natural.<\/p>\n\n\n\n<p>Els lactobacils, o els bacteris que cont\u00e9 la pasta mare, s\u00f3n els mateixos que trobem en el iogurt o en el quefir, fet que els converteix en bons probi\u00f2tics.
