Aix\u00f2 \u00e9s inesgotable.<!--more--><\/p>\n<p>Afortunadament, la ci\u00e8ncia \u00e9s cada vegada m\u00e9s acurada a l&#8217;hora de pronunciar-se i cal distingir entre la informaci\u00f3 vera\u00e7 i contrastada i els rumors \u2013per posar-ne un exemple\u2013 d&#8217;algun programa de televisi\u00f3 suposadament divulgatiu, per\u00f2 elaborat per un equip irresponsable que ens explica disbarats com que no cal vacunar els fills!<\/p>\n<p>\u00daltimament sembla que li ha arribat el torn al sucre, que ha passat a ser dimonitzat en benefici de productes substitutius, aix\u00f2 s\u00ed, sempre amb l&#8217;eterna etiqueta de &#8220;naturals&#8221;. Parlem de coses com els xarops o el sucre de coco, que ens venen amb el reclam que &#8220;no augmenten el nivell de glucosa en sang&#8221;.<\/p>\n<p>[mautic type=&#8221;content&#8221; slot=&#8221;ebook-02-ca&#8221; \/]<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Parlem_del_sucre\"><\/span>Parlem del sucre<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>La pregunta \u00e9s immediata: \u00c9s tan dolent el sucre? Qu\u00e8 cont\u00e9 perqu\u00e8 sigui tan nociu per a la salut? El sucre com\u00fa consta de dos components a parts iguals: la glucosa i la fructosa. La glucosa \u00e9s el dol\u00e7 i tamb\u00e9 la font d&#8217;energia principal de les c\u00e8l\u00b7lules del cos. D&#8217;altra banda, la fructosa \u00e9s la part &#8220;dolenta&#8221; del sucre i nom\u00e9s el fetge pot processar-la.<\/p>\n<p>Prendre massa sucre engreixa, com tots sabem. Quant \u00e9s massa? Doncs m\u00e9s del que el cos necessita. Aquest \u00e9s l&#8217;efecte &#8220;nociu&#8221; m\u00e9s conegut del sucre. L&#8217;altre, menys conegut, \u00e9s el que produeix la fructosa, l&#8217;altre component, i \u00e9s que el seu exc\u00e9s pot comportar que el cos generi resist\u00e8ncia a la insulina i que s&#8217;elevin els nivells de triglic\u00e8rids a la sang, fet que al seu torn incrementa el risc de malalties card\u00edaques.<\/p>\n<p>Tamb\u00e9 podria sorgir una altra pregunta. Fructosa ve de fruita, no? O sigui, que el sucre de la fruita \u00e9s dolent? I la resposta \u00e9s no, no \u00e9s dolent, per la senzilla ra\u00f3 que la fructosa ens arriba acompanyada de vitamines, fibra, aigua i minerals, que s\u00f3n components que mantenen el nivell de sacietat m\u00e9s temps i eviten l&#8217;efecte negatiu de la fructosa pura. De manera que no s&#8217;ha de tenir por de la fruita.<\/p>\n<p>Per\u00f2 cal tenir precauci\u00f3 amb el que apareix en les etiquetes, coses que poden sonar molt sanes, com xarop de blat de moro (amb alt contingut de fructosa), xarops org\u00e0nics i coses semblants. Totes elles ens han de fer ser cauts.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"La_veritat_sobre_els_substituts_%E2%80%9Cnaturals%E2%80%9D_del_sucre\"><\/span>La veritat sobre els substituts &#8220;naturals&#8221; del sucre<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>S\u00f3n coses que, insistim, sonen molt b\u00e9: els xarops d&#8217;aur\u00f3 o d&#8217;atzavara, la mel, el sucre de coco&#8230; Tots ells tenen dos components b\u00e0sics: glucosa i fructosa, \u00e9s a dir, que s\u00f3n sucres. I prendre&#8217;n massa quantitats t\u00e9 el mateix efecte que prendre massa sucre: d&#8217;una banda, engreixen, i de l&#8217;altra, elevaran el nivell de triglic\u00e8rids i generaran resist\u00e8ncia a la insulina. No importa que te&#8217;ls &#8220;venguin&#8221; com a sans. Prendre&#8217;ls en exc\u00e9s \u00e9s perjudicial per a la teva salut, encara que et diguin que s\u00f3n m\u00e9s rics en vitamines i minerals. Al cap i a la fi, no \u00e9s rellevant d&#8217;on venen els sucres: el que \u00e9s important \u00e9s no abusar-ne, en cap de les seves presentacions.<\/p>\n<p>Per exemple, \u00e9s preferible prendre 5 grams de sucre en el caf\u00e8 que 1 cullerada (15 grams de sucre) de xarop d&#8217;atzavara per endolcir. Hem de centrar-nos en el contingut total de sucre, no en la seva proced\u00e8ncia, per natural i saludable que ens sembli.
